Yes, many of the Mortal Kombat comics are considered canon, especially the ones released by DC Comics. They fill in the gaps between the games and expand on the lore.

I've read a ton of these comics, and while some are canon, others are just awesome side stories. The recent ones by DC tend to align more with the game’s story.
