LOL, good luck with that. The train in GTA 5 is like the ultimate force of nature. No matter what you throw at it, from cars to tanks, the train just keeps on chugging. So, in short, nope, you can't stop it in normal gameplay. It's the immovable object in a world full of unstoppable forces.
