Nah, eShop cards can't be used for V-Bucks. Stick to buying them directly in Fortnite.
From personal experience, eShop cards can't be used to buy V-Bucks. You have to get V-Bucks through the game's store itself. Tried it once, didn't work.
Unfortunately, eShop cards won't get you those sweet, sweet V-Bucks. You need to buy them through the in-game store or platform-specific currency.
