Nope, Xbox Live doesn't currently allow you to hide your status from specific friends. You can either appear offline to everyone or be visible to all.

As someone who's tried, I can confirm you can't selectively hide your status on Xbox Live. It's all friends or none.

Sorry, Xbox Live is an all-or-nothing deal when it comes to your online status. You'll have to appear offline to everyone if you want to go stealth mode.
