You can't technically "quit" the Vanguard, but you can just choose not to participate in their missions anymore. The galaxy is your oyster, after all!

You can just ignore the Vanguard missions and explore other parts of the game.

In Starfield, you can move on from the Vanguard at any time, but make sure you've completed any missions you care about first.
