Actually, you can in a way. Before the damage step during combat, there's a round of priority where players can cast instants or activate abilities. So if you've got something that can prevent or redirect damage, that's your golden moment. Been playing MTG for years, and snagging someone with a well-timed "Fog" spell never gets old.
