Nope, not directly. The Xbox 360 Kinect needs an adapter to work with Xbox One, and those adapters are hard to come by now.

I tried it myself! You'll need the Kinect Adapter for Windows to make it work. It's a bit of a hassle, but totally doable if you really want to use that 360 Kinect!

Yeah, but you'll need a special adapter! The Xbox 360 Kinect isn't directly compatible with Xbox One, so Microsoft made an adapter to bridge the gap. Good luck finding one, though, since they're pretty rare these days.
