Nope, you can't plant mushrooms in Animal Crossing: New Horizons like you do with flowers or trees. Mushrooms pop up on their own near trees during mushroom season in November (for Northern Hemisphere players) and May (for Southern Hemisphere players). It's all about the in-game season!
