Nah, in the regular story mode of GTA 5, you can't officially play as a cop. The main characters are all about that criminal life. But, if you're really into the idea of enforcing the law in Los Santos, there's a popular mod called LSPDFR (Los Santos Police Department First Response) that lets you live your dream of being on the right side of the law. Just remember, mods are for PC only and using them online can get you banned, so keep it to single-player!
