Unfortunately, you can't play Def Jam: Fight for NY on the PS5 directly since it isn't available on the PlayStation Store or as a backward-compatible title. Bummer, right?

I tried searching for it on the PS5 store and no luck. Looks like this one's only for older gen consoles like PS2 and Xbox.

Def Jam: Fight for NY isn't available for PS5. Best bet is to find a PS2 or maybe an Xbox to relive those fights.
