I tried it myself, and without Nintendo Online, I enjoyed the single-player story and even had some fun with local multiplayer. But if you crave the full-on ink-splattering chaos with friends globally, you'll want to sign up for Nintendo Online.
You totally can play Splatoon 2 without Nintendo Online, but you'll be limited to the single-player campaign and local multiplayer modes. If you're looking to dive into those epic online Turf Wars, though, you'll need a Nintendo Online subscription.
