I tried it myself on the Switch version in Super Mario 3D All-Stars. Works like a charm with the GameCube controller. All your retro dreams come true!
The original Wii version of Super Mario Galaxy requires the Wii Remote and Nunchuk for motion controls. The GameCube controller isn't supported there.
