Nope, you can't quick save in Survival Mode. Fallout 4's Survival Mode ups the challenge by disabling quick saving and most of the autosaves. You gotta sleep in a bed to save your game, which adds a whole new level of strategy (and stress).

Short answer: No. Survival Mode in Fallout 4 means you're playing by the harshest rules. That includes no quick saving. Only beds save the day (and your game).
Actually, no. Quick saving and the majority of autosave functions are disabled in Survival Mode. It's part of what makes it 'survival'. You need to find a bed and sleep to save your progress. Kinda makes every decision you make a bit more weighty, huh?
