When a creature with Soulbond enters the battlefield or another creature enters the battlefield under your control while you control a creature with Soulbond, the ability triggers and goes on the stack. This is when you can respond to it. You can respond with instant spells, abilities, or flash creatures, either to disrupt the Soulbond pairing or to affect the battlefield in a way that benefits you before the creatures become paired.

Nope, can't do it. Once Soulbond pairs up, it's like they've swiped right on each other鈥攏o takebacks or interruptions allowed. They're bonded for life, or at least until the board gets wiped.
To add a slight clarification, responding to Soulbond is all about timing. You're reacting to the ability going on the stack before the creatures become officially paired. Soulbond isn鈥檛 like hexproof or shroud; it doesn鈥檛 protect itself. So, yes, you can interact with it, but make sure you're quick on the draw!
