Nah, once it's happening, it's happening. You can't directly stop a sacrifice since it's a cost and not an effect on the stack. Do something before or after, but not to the sacrifice itself.
Been there, done that! I saved my creature from being sacrificed by my opponent's spell by casting an instant that bounced it back to my hand. The sacrifice still happened, but I got to reuse my creature later. Timing and knowing your cards are key!
