You can't skip all the cutscenes; some are mandatory to progress the story. But for the most part, hitting the skip prompt works.

Yep, most cutscenes can be skipped in Jedi: Fallen Order by pressing the appropriate button prompt, usually 'B' on an Xbox controller or 'Circle' on a PlayStation controller.

I skipped through plenty of cutscenes to get to the action faster, just look for the button prompt!
