Actually, you can't. The scrapyard in GTA 5 is just for show and extra cash when vehicles get wrecked. It's not a place to store your cars, so hit up a garage for that.
Tried it, didn't work. You gotta keep those cars in a garage if you wanna keep 'em. The scrapyard doesn't function as a storage space, unfortunately.
