Actually, GTA 5 doesn't let you switch shoulders when aiming. It's one of those things you kinda wish it had, especially when you're trying to peek around the left side of cover, but alas, we're all just living in a right-shoulder dominated world.

Hot take: Not being able to switch shoulders in GTA 5? Barely an inconvenience. The game's too fun to worry about which shoulder you're looking over.

Nope, you can't switch shoulders in GTA 5. The game doesn't have a mechanic for changing the camera shoulder view like some third-person shooters. You're stuck with the default over-the-right-shoulder view for the duration of your criminal escapades in Los Santos.
