Yep, you can totally turn into a variety of animals in GTA 5 Online! You need to find and eat peyote plants scattered around the game world. Each plant gives you a random animal transformation, from a bird to a mountain lion. It's a pretty wild easter egg Rockstar threw in there for fun.

I turned into a dog once and got chased by the cops. 10/10 would recommend for a good laugh. Finding those peyote plants is like a whole adventure on its own.
