Nope, you can't just unequip equipment anytime you feel like it in MTG. Equipment can be attached to a creature using its equip ability only at the time you could cast a sorcery (so during your main phase when the stack is empty). Want to swap that Sword of Feast and Famine to another creature? Wait for your main phase!
Technically, you can't unequip at any moment. It's not like throwing off a backpack mid-run; you need to follow the rules. Equip during your main phase, not whenever you feel like it.
