Yup, you can! Go to your PS4 settings, scroll down to 'Login Settings,' and select 'User Management.' From there, you can delete the user profile that's attached to the PSN account you want to unpair.
From my experience, just deleting the user profile through 'User Management' will do the trick. Did it last week, and it worked like a charm.
Nah, you can't 'unpair' it like a Bluetooth device, but you can sign out and delete the user profile.
