Actually, they do cancel out. It's part of the game's rules to keep things balanced. Imagine having a creature beefed up with +1/+1 counters and then someone tries to nerf it with -1/-1 counters, they naturally neutralize each other. Magic The Gathering's rulebook is pretty clear on this!
