Absolutely, Incinerate does stop Undying from triggering in MTG! Here’s why: When Incinerate deals damage to a creature, and that damage is enough to destroy it, Incinerate’s clause that prevents damage from being healed for the rest of the turn also stops any effects that would replace going to the graveyard (like Undying) from happening. So, if your Undying creature gets hit by Incinerate and would die, it won’t come back with those extra +1/+1 counters.

Nah, Undying's gonna trigger no matter what. Incinerate or not, if the creature's got undying, it's coming back.

As someone who's played a ton of MTG, I can confirm Incinerate can stop Undying creatures from coming back. It's all in the card's text—damage can't be prevented for the rest of the turn. So, if the creature would die from Incinerate's damage, it's not coming back. Learned this the hard way in a game.
