Nope, the PS3 doesn't support exFAT. Stick to FAT32 for external drives!

PS3 only works with FAT32. exFAT won't fly on this console.

I've run into this myself - PS3 just doesn't play nice with exFAT. Format your drive to FAT32 and you'll be good to go.
