In Tokyo Ghoul Season 3, we follow Kaneki who now has amnesia and is part of the CCG named Haise Sasaki. It's confusing at first but hang in there; it gets clearer!

Honestly, Season 3 of Tokyo Ghoul is a bit of a puzzle if you haven't read the manga. But basically, Kaneki loses his memory and becomes an investigator named Haise Sasaki.
