It depends on the route you take! In the Genocide route, you have to fight Sans and he does die. But in the Pacifist and Neutral routes, you don't have to fight him, and he survives.
Played Undertale multiple times! In the Genocide route, you fight and kill Sans. Pacifist and Neutral routes, you're good and so is he.
