This means it can affect things with protection from certain colors or types, unlike targeted spells which can't interact with those protected.

Absolutely not. 'Each' is pretty much a blunt instrument in MTG, smacking everything it matches without discrimination. So, if your spell says 'destroy all creatures', your indestructible or protected ones aren't getting a free pass just because they think they're special.
Gonna disagree slightly. While technically 'each' doesn't target, knowing this won't save you from feeling targeted when a board wipe clears your whole setup. So, emotionally? Yes, it targets me very much. Strategically? Nah.
