Oh, for sure! Undying absolutely triggers when you sacrifice a creature. The key here is that undying brings the creature back only if it didn’t have any +1/+1 counters on it at the time it went to the graveyard. From experience, sacrificing my undying creature has saved me more times than I can count. It's a great strategy that not only triggers the undying but also messes with your opponent's plans. Just remember the +1/+1 counter rule, and you're golden.

Nope. Undying doesn't work if you sac a creature with a +1/+1 counter already on it. Just doesn’t happen.
