Actually, I've lost game saves before by uninstalling. It's not common, but it happens. Best to back up important saves just to be safe.

Depends on the game. Most of the time, your saves won't disappear into the digital abyss. But there are those rare cases where a game might not use Steam Cloud, or you've turned it off, and poof, there go your hours of progress. Always good to check game settings or back up saves manually just in case.
