Screenshots are your friend! If you can't copy text directly, take a screenshot and use an OCR (optical character recognition) app to extract the text from the image.
From my experience, the easiest way to copy and paste is through Instagram DMs. You can copy text from messages by tapping and holding on the message, then selecting 'Copy'.
You can't directly copy and paste text from posts or comments on Instagram, but you can use a browser! Just open Instagram on a web browser, highlight the text you want, and hit Ctrl+C (or Command+C) to copy and then Ctrl+V (Command+V) to paste.
