Honestly, just go to the photo or album, find the little icon that looks like a globe or a silhouette of people, and select 'Only Me'. Done!
From personal experience, I found it super simple. Just open the photo, click the three dots, select 'Edit Post Privacy', and pick 'Only Me'.
You can make your Facebook photos private by editing the privacy settings for each photo or album. Under 'Settings' -> 'Privacy', change the audience to 'Only Me'.
