Apple doesn't exactly make it easy, but one way is to use a Mac: start a WhatsApp call, plug your iPhone into the Mac, and use QuickTime to record the call.
Just so you know, recording calls without the other party's consent can be illegal in some places. Be careful!
Honestly, it's a tricky task because of Apple's restrictions and WhatsApp's encryption. Might be easier to ask the other person to summarize the call for you.
