They won't be alerted. Just hit the 'Unfriend' button in their profile. Easy peasy!
I did this last week. You just unfriend them on their profile. No notification. They'll never know unless they look.
Unfriend them stealthily by going to their profile, clicking on the Friends button, and selecting 'Unfriend.' Facebook doesn't send a notification for this, so they won't know unless they specifically check.
