Changing your email on PSN is simple! Go to Settings > Account Management > Account Information > Sign-In ID (email address), then enter your new email.

I did this last week! On your PS4 or PS5, go to Settings > Account Management > Account Information > Sign-In ID (email address) and pop in your new email. You'll get a verification email to confirm.
