Turns out humans weren't fans of the water apocalypse, so they just kinda... dipped.
The sea levels just went up, and humans didn't stick around for the swim lessons.
In the Splatoon series lore, humans vanished because of rising sea levels that submerged much of the Earth! Squids and octopuses evolved into Inklings and Octolings to take over the turf.
Ah, those silly rising tides and lack of foresight!
