They unfused after the Potara earrings' fusion limit expired. Apparently, the Supreme Kai鈥檚 earrings have a time limit for non-Kai users.
In Dragon Ball Super, Goku and Vegeta defuse from their Vegito form because the fusion time limit ran out, especially after using too much power in their Super Saiyan Blue form. So yeah, the almighty fusion isn鈥檛 forever, it just felt that way!
Vegito ran out of time during the fight with Zamasu. Overusing their power in Super Saiyan Blue form sped up the defusion process.
