Easy peasy! Go to Settings > Account Management > Account Information > Wallet. From there, select Payment Methods and choose the one you want to update or add a new one.

From personal experience, I found the easiest way was through the PS App. Tap on your profile, go to Payment Methods, and follow the prompts. Got it done in minutes!
