First, log into your PS4, then go to Settings > Account Management > Account Information > Sign-in ID. Enter your new email address and confirm it. You'll get a confirmation email, so make sure you follow the instructions there too!

As someone who just did this last week, all you need to do is go to Settings, Account Management, Account Information, then Sign-in ID. Update your email, confirm it, and check your inbox for a confirmation email.
