Log into your PlayStation account, go to 'Settings,' then 'Account Management' and finally 'Account Information.' You can update your email and password there. Easy peasy!

I did this recently: Go to 'Settings' on your PS4/PS5, then 'Account Management,' and 'Account Information.' Change your email under 'Sign-In ID' and your password under 'Security.' It took me about 5 minutes!
