You just have to go to 'Account Management' on the XMB, select 'Account Information', then 'Sign-in ID (Email Address)', and enter your new email. Easy peasy!

Navigate to 'Account Management' from the home screen, click 'Account Information,' and then select 'Sign-in ID (Email Address)'. Type in your new email and you're set!
