Changing your trigger order in MTG Arena is pretty straightforward once you get the hang of it. You gotta make sure you have 'Full Control' mode activated. Just press 'Ctrl' to toggle it on. When you have multiple triggers on the stack, you'll be able to click on each of them in the order you want them to resolve. It's like being a wizard, but you're just clicking on stuff instead of casting spells for real.
