From experience: Go to Settings on your PlayStation, then Account Management, and Account Information. Under Sign-in ID, you can change your email. You'll need to verify your new email address, of course.

Head over to the Sony Entertainment Network (SEN) website, sign in, select Account Management, and you'll see the option to change your email. Make sure to verify the new email after!
