Nope, Facebook doesn't let you delete your birthdate, but you can make it invisible to others by changing the privacy settings to 'Only Me' in the Contact and Basic Info section.
Just hide it! Go to your profile -> About -> Contact and Basic Info -> Birthdate -> Set to 'Only Me'. Easy peasy.
