Just a heads up, you can't completely delete a PSN account from Sony's system permanently, but you can remove it from your PS Vita. Try going to Settings > PlayStation Network > System Activation > Game > Deactivate, then do a full system restore.

You can delete your PSN account on PS Vita by going to Settings > Format > Restore This System. This will remove all data, including the PSN account, so make sure to back up anything important!

Honestly, just factory reset the Vita. It's quicker. Settings > Format > Restore This System. Poof, it's gone.

From experience, I had to deactivate my PSN account first. Head to Settings > PlayStation Network > System Activation > Game > Deactivate, then proceed to restore the system under Settings > Format > Restore This System.
