Go to 'System Settings' on your Xbox 360, then navigate to 'Network Settings' and select your network. Your IP address will be listed under 'Configure Network.' Boom, you're done!

In my experience, just navigate to 'Network Settings' in 'System Settings', pick your network, hit 'Configure Network', and you'll find your IP!
