Monkeys were part of the Monkey Fairground update. You'll have to trade with someone who has one now since the event is over.

To get a monkey in Adopt Me, you need to open a Monkey Box. They were available during the Monkey Fairground event. If the Monkey Fairground event isn't currently active, you'll need to trade with other players who have the Monkey pet.
