Just find the colorful, flat coral on the walls and ceilings in the Shallows or Safe Shallows biome and smack it with your Survival Knife. Boom, table coral sample!
You can get table coral samples by simply cutting the flat, disc-shaped corals found mainly in the Safe Shallows biome with your knife.
Seriously, just use your knife on the flat, neon coral in the Shallows. It's not rocket science!
