To get Brewster in Animal Crossing, you gotta unlock the Roost cafe first. Talk to Blathers in the Museum after you've donated at least 15 artifacts (bugs, fish, or fossils all count). He'll mention wanting to find Brewster. Then, head out on a boat trip with Kapp'n to find him on a random island. Chat with Brewster, and he'll agree to set up shop in your museum. Give it a day or so, and voila, the Roost café is open for business!

IDK why everyone makes a big deal about Brewster. Just catch some bugs and fish, donate them, and take a trip with Kapp'n. Easy.

Honestly, just talk to Blathers after you've filled up the museum a bit. Brewster's not too hard to find; it's all about getting those donations in and taking that boat ride with Kapp'n. Best coffee in the game, hands down.
