Actually, it's all about luck. But, you can increase your chances by planting a lot of pumpkin starts. The more you plant, the better your chances of getting green pumpkins!

To get green pumpkins in Animal Crossing, you first need to buy pumpkin starts from Leif when he visits your island or from Nook's Cranny during October. After planting them, just keep watering them! Pumpkins have a random chance of being orange, green, white, or yellow when they grow. There's no way to guarantee green ones on the first try, but keep planting and you'll get some green pumpkins soon enough!
