To hide all your photos, you can change the audience of each album to 'Only Me.' You'll find this setting in the privacy options when you edit albums and photos.
You can't technically hide 'all' photos at once, but you can change the privacy setting to 'Only Me' for each one. It's a bit tedious but works.
